Brunkål / Brown cabbage or whatever the name is...

Min mor laver brunkål til os i dag. Jeg ved ikke om det er noget for en stor barsk schæferhund, men lille Vaks elsker grøntsager, så det er nok lige noget for ham. Han var i hvert fald ikke til at jage væk, da mor stod og skar kålen.
Jeg ved ikke om alle min blogvenner ude i verden kender denne ret, og jeg ved heller ikke om rettens navn kan oversættes til Brown Cabbage, men der kommer i hvert fald en opskrift her.

My mom makes Brown Cabbage for us today. I do not know if it's edible for a big tough German shepherd dog, but little Vaks love vegetables, so it's probably just the thing for him. He was certainly not to chase away when mom was cutting the cabbage.
I don't know if all my blogfriends around the world know this dish, and I don't know either, whether the dish's name can be translated to Brown Cabbage, but anyway here is a recepi.

Opskrift på Brunkål:

1 hvidkålshoved
100 g sukker
75 g margarine
1 stk. bacon
1 ribbenssteg eller 1 stk. kogeflæsk.

Skyl og snit hvidkålen i passende stykker. Smelt sukkeret i gryden. Når sukkeret er gyldenbrunt kommes magarinen i. Tilsæt kålen. Rør rundt. Kom herefter bacon og ribbenssteg i kålen og pak kål godt rundt om kødet. Lad det simre i 1½ - 2 timer til det er mørt. Jo længere tid kød og kål simrer jo bedre bliver det. Vores simrede i 4 timer. Serveres med groft rugbrød og sennep.


Recepi Brown Cabbage:

1 head of white cabbage
100g sugar
75g margarine
1 pc. smoked bacon
1 rib roast or 1 piece of cooking bacon.

Wash and cut the cabbage into suitable pieces. Melt the sugar in the pan. Once the sugar is golden brown add magarinen. Add the cabbage. Stir. Add then bacon and spareribs in the cabbage and "wrap" the meat in the cabbage. Simmer for 1½ - 2 hours until tender.The longer the meat and cabbage simmer the better it gets. Our simmered for 4 hours. Serve with rye bread and mustard.


Sukker smeltes i gryden.
The sugar is melted in the pan.
Hvidkålen snittes.
Cut the White Cabbage.
Margarinen er tilsat sukkeret.
The margarine is added to the sugar.
Kom kålen i, rør rundt.
Add the Cabbage and stir.
Kødet.
The meat.
Læg kødet i kålen og "pak" kødet ind i kålen.
Place the meat in the cabbage and "wrap" the flesh into the cabbage.
Kødet tages op af kålen og skæres i skiver.
The meat is taken out of the the cabbage and cut into slices.
Den færdige kål.
The finished cabbage.

Velbekomme.
Bon appetite.

    1. You're right about that Molly. Mom googled the recipe of the Polish Bigos, and some of the ingredients are the same, but there is a lot more ingredients ex. tomatoes, prunes, wine and so on. Our recipe is much simpler. (Easyer for mom to make LOL)

  2. Looks good! My ghostwriter used to make cabbage with bacon and onions. Oma makes purple cabbage with apples.

  4. OMD!! With rye bread and mustard ...... Mum wants to know if she can come to your house for dinner. Not me!! I had cabbage once. It gives me gas!! BIG TIME ...
